Tetsuya & Tasmania

‘As a food lover with a passion for natural flavours, I knew I had found a paradise,’
Tetsuya first visited Tasmania in 1990 to source the exquisite fish that was to become the foundation for his signature dish, Confit of Tasmanian Ocean Trout.

Tetsuya soon became involved with a range of existing Tasmanian products and took a hands-on role in the evolution of several new ones. Selected products are now included on the menus of Tetsuya’s restaurants in Sydney and Singapore.

In 1994, Tetsuya became a Brand Ambassador to help make the wider world more aware of the good things the State of Islands has to offer. More recently, he commissioned the Wooden Boat Centre at Franklin, in Tasmania’s south-east, to build him a fishing boat using traditional methods and world-renowned endemic timbers, including the legendary Huon pine. The wooden boat, Belle, was launched on June 1, 2011.

Tetsuya is a patron of Tasmania’s vibrant fine arts sector, and visits his friends in the state as regularly as his busy lifestyle allows.

Rockliff Seafoods

Rockliff Seafoods was founded in 2007 by Neville Rockliff, his wife Helen, and their four children. Based on the picturesque Sunshine Coast in Queensland, Rockliff Seafood specializes in catching and processing premium Australian seafood, namely Rockliff Spanner Crab (Ceas) which is sustainably caught in the local tropical waters.

The Rockliff Family is originally from Tasmania where they have been supplying premium quality seafood products out of Queensland and Tasmania for local and export markets for more than 40 years.

Tetsuya’s appreciation for fresh produce has helped forge the unique relationship he shares with the Rockliff family. Neville Rockliff, says Tetsuya has been “family” for years and their further collaboration crystallises years of history and friendship.

“Tetsuya and I talk about everything together. He has become my best mate and he even calls my mother and father ‘Mum’ and ‘Dad’,” said Neville.

Rockliff Spanner crab (Ceas) is 100% Spanner Crab meat, hand picked out of the shell. The unique production process has been developed over a number of years, in collaboration with Tetsuya Wakuda and his support and knowledge ensures that Rockliff Spanner Crab (Ceas) provides a truly distinctive taste sensation. With its sweet, white flesh and firm texture, it truly is Australia’s sweetest seafood.

The Queensland Spanner Crab was the first Queensland fishery to be announced as sustainable by the Australian Government under the Environment Protection and Biodiversity Conservation Act. Rockliff Seafoods’ vision is to provide the best possible quality Australian seafood in a sustainable way and is dedicated to keeping this industry sustainable for many years to come.
